Soetmuis is made on a very small scale when the vintage allows it. The 2 most important factors that contribute to the success of this wine is the presence of Botrytis Cineraria and the art of picking the grapes at exactly the right time to obtain the perfect sweetness/acidity/alcohol balance in the eventual wine.
The style is not as sweet and syrupy as is traditional for South African Noble Late Harvest wines, and is one of the few Noble Late Harvest Wines made from Sauvignon Blanc, with no wood treatment and lower alcohol.
