“It is my baby. After years of trials with different terroir, barrels from different coopers, wood from different forests, types of wood, barrel sizes, roasting intensities, the grain of the wood, age of the barrels and time spent in barrel, my first wooded Sauvignon Blanc was released in 2008. I exchanged 225 litres for 500-litre barrels and new wood for older wood. The right barrel age, roasting intensity and time in barrel, produced a very satisfactory final result: a Diners Club Winemaker of the Year Award, a Platter’s 5 stars, ’93 from Tim Atkin (MW, UK), ’92 Lauren Buzzeo (Wine Enthusiast (USA), ’94 Christian Eedes (RSA) and ’96 Miguel Chan (RSA).”
